Yeah, but what KIND of liver?

The commercial variety is pork in all likelihood, simply because it s the cheapest meat. There is no reason why it shouldn't be made with other meats. I made some very nice ones that contain only beef. BTW Leberwurst contains SOME liver, probably in the order of 30% for the better varieties, but it is not made FROM liver only, one reason being that liver contains no fat and you need some fat for processing and shelf life. It is prohibited in EU to add non-animal fats, but elsewhere I suppose you could add some naturally hard vegetable fat. 2003:DB:272C:3D8C:8416:B1C6:F16B:3596 (talk) 09:09, 27 September 2025 (UTC)[reply]
